Al, I can tell you my F47M ( maple ) from New Hartford is a killer box. First Adi top I have ever owned. Love it. I bet a rosewood b/s would fulfill any bluegrass needs for sure.
You might recall, already got some maple on that outline with my F65ce, but I've never seen any of the family with my ideal neck, been watching for about ten years now. I don't think they EVER changed the template for that neck (the 24-3/4 scale/24 fret), it's unique.

I just was fortunate enough to try a 1979 Guild D50 and a 1979 Guild D55 (probably the same owner) at a store here in Seattle. The D50 was deeper and louder while the D55 was chimier. Frankly I preferred the sound of the D50. Both were in great condition

Were there periods where the D-55 had scalloped bracing? Or perhaps, if that was so then the D-50 also got the same treatment...

I'm not sure when it started, but I'm pretty sure both models had scalloped, red spruce braces in New Hartford. Probably Tacoma as well, although the catalog doesn't say.

New Hartford cut their teeth making D-55 prototypes in 2008 the D-55 so that could be one of the changes they instituted there, but it may precede that. As for the D-50 models, I can't say for sure.
