When did Guild shift 12-string nut and fingerboards?

Any ideas when Guild shifted from 2” to 1 7/8” nut and flat to radiused fingerboards on 12-strings?

No.

But based upon prior experience with "The Guild Way" I expect you will be disappointed if you are looking for a date where every 12 string before that date had one characteristic and every 12 string after had a different characteristic. Maybe you could get a useful answer if you added a model number or told us what specs you wanted and let people tell you years and models?

The flat fingerboards (and wider nuts) were standard for the F-212 and F-312 in Hoboken. I'm not sure if we established a change date but probably when they moved production to Westerly. Some D-40 in 1963/64 also had flat fretboards.
