Would a 1979 Guild D50 have an Adirondack top?

And if so is there a way to tell from the serial number or on the label in the guitar?

Probably not. Adirondack wasn't available in the size/quantities needed from ~WW II to the 90's. Unless otherwise specified, it's probably Sitka.

My understanding is that Guild did not make any Adirondack-topped guitars until the Tacoma era in the early 2000's. A '79 D-50 would likely (almost certainly) have a Sitka top.

Just to add to the consensus, the other 2 guys have covered the history as we know it here: No adi until Tacoma.

Conversely, Guild's sitka was very very good indeed, thanks in large part to a guy named Willie:

And I suspect what he learned at Guild was simply a continuation of their existing standards of selection.
