does anyone know if you can still buy the volume and tone knobs? I removed mine because I thought it would be cool lol

There were a couple of variations of knobs on the X79s and X80s, none of which are commonly available today. There are some "pretty close" alternatives, though. Do you recall what the knobs looked like? I would guess they would have been either notched speed knobs or knurled metal.

Well notchless speed-knobs are just speed-knobs

and they are available everywhere since Les Pauls had them for a while. I don't think Guild ever used plain speed knobs, but if complete originality doesn't matter or even better they were original (I could very well be wrong) then just do a search for speed knobs and you'll find a bunch:
