Just a matter of selecting the right open mic venue, I guess, but I'll probably join the other SS guys and seek a more intimate setting wherever that may be.
I really do like the acoustic open mic's.

On the contrary, I was invited to come to a "blues jam" to sit in on drums. It was so ghastly loud that I used sign language on a friend to let him know I was bolting, and would not stay to play.

I hate to be one to say it, but I don't believe it is any longer cool for everyone to believe they should play electric guitar like Ted Nugent. I would rather see that honor left to Ted himself, and in a location somewhere other than where I will be.

That's not the way it's done here. The host of any of the open venues that I go to wouldn't tolerate that behaviour. There have been numerous times when I've asked another musician to join me (guitar, harmonica, percussion etc), but unless you invite someone to join you, it's you & you alone.

NB: most of the venues that I go to are non-profit, not in bars or cafes, and 99% acoustic.

I've played at dozens of open mics, in Florida and in Maryland. Only once have I seen someone just jump up and join in w/o asking and the host put a stop to it very quickly.

I've seen lots of different open mics formats. One of the more interesting is you put your name on a slip of paper and that is placed in a fish bowl. The host starts by drawing a name. That person gets ready, while the host plays two songs. Player one goes up to the mic, draws a name and announces that before playing. So on and so on.

On the host side he/she needs to manage the stage, control the sound and keep things moving. Don't let things drag between sets. Players need to be ready to go. Tune up before you hit the stage, decide what you are going to play, quick sound check and go. Don't go up, take your guitar out of the case, tune up, yell "hows everybody doin" in you best rock and roll voice, fiddle around some more, adjust the e.q., then mull over what you are going to play.
