Can anyone tell me what replacement nut size I should be looking for? I'm thinking about going with bone.

The guitar has the original nut, but the action is way too low for my tastes. The tech who set it up told me he removed a homemade shim from underneath, as the nut was unglued and held on only by string pressure. Now I'm thinking that shim was put there for a reason - my fingers just slide off the strings with the slightest bend... there's nothing to grab on to!

I usually use these.
The Gibson style flat bottom type should fit an S300, but do measure your old one to be sure.

If low action is the only problem (no buzzing with open strings) I would leave the nut alone and adjust the bridge instead.
Like you I don't like the action too low, but raising the nut too much will mess up intonation.
