OK, I'm really enjoying this smoker. Just smoked 2 lb. Lake MI salmon, smoking 2 lb. Walleye tomorrow. Should be a big hit at the party on Sat at my daughter's house. All smoked with hickory chips.

Had a small smoker that eventually rusted out. Best thing I remember was smoking blue fish that a friend gave me. Blue fish has a (deserved) reputation for being oily, and smoking cut through that. Duck was good, too.

I confess that I have smiled every time I read the title because I have a vision of dread taking a fillet, wrapping it up in parchment paper, rolling it and twisting the ends and lighting up.

The imagery is strong because I have two friends who roll their own tobacco and we often talk about rolling techniques and misunderstandings with people who think if you are rolling your own it is somehow illegal.

So far I've smoked Lake Trout, Rainbow Trout, Salmon, and Walleye.
